La Baleine sea salt is one of the finest in France, all the way from the UNESCO-protected Camargue region. And now it’s available to buy in the UK from Tesco and Ocado. Grab a bottle of the coarse salt and try out this stunning fish dish as recommended by La Baleine. 








Ingredients

  • 1 sea bream of about 1kg 
  • Thyme 
  • Bay leaves 
  • Garlic Fennel 
  • 2lb of La Baleine coarse salt 
  • Rice 

Directions

1Gut the bream without opening it (via the gills). Insert the thyme, bay leaf, garlic and fennel via the fish’s mouth.

2Spread a layer of coarse salt approximately 1cm deep in a dish the size of the fish, place the fish on it and cover with the rest of the salt. Moisten with water.

3Put the dish in the oven at 200 °C for 20 minutes. Serve with rice.
